Microwave Peanut Brittle

Whip up a batch of this super-easy sugar fix! This sweet-and-salty treat will have everyone coming back for seconds, or thirds!


Microwave Peanut Brittle
  • 1 cup - granulated sugar
  • 1/2 cup - corn syrup
  • 1 cup - peanuts
  • 1 teaspoon - butter
  • 1 teaspoon - vanilla extract
  • 1 teaspoon - baking soda

  1. Line a large cookie sheet with parchment paper, wax paper, or a silicone mat. In a deep microwave-safe bowl, combine sugar and corn syrup. Mix thoroughly and microwave on HIGH for 4 minutes.
  2. Stir in peanuts and microwave on HIGH until the mixture is light brown, about 3 to 5 minutes longer.
  3. Stir in butter and vanilla until combined. Microwave on HIGH until peanuts are lightly browned, about 1 to 2 minutes longer.
  4. Stir in baking soda until mixture is light and foamy. Pour onto the prepared pan and cool for 30 minutes.
  5. Break into pieces to serve and store in an airtight container.
