Cake Mix Biscotti
Try using a red velvet cake mix, and dip the bottom in melted white chocolate for a special Valentine's Day treat!

Cake Mix Biscotti
- 1 cup - flour
- 1/2 cup - butter melted
- 1 tablespoon - vanilla extract
- 3 large - eggs
- 1 cup - mix-ins (if desired)
- 1 - box cake mix

Directions
- Preheat oven to 375. Line baking sheet with silicone mat.
- In a bowl of a stand mixer combine the cake mix, flour, butter, eggs, and extract until combined – about 2 minutes.
- Add the mix-ins and mix for another minute.
- Divide the dough in half and form into 2 logs each about 12”x2”.
- Bake for 30 minutes. Let cool on pan for 15 minutes.
- Lower the oven temperature to 325.
- Using a serrated knife cut each log into ½ inch size slices. Arrange the slices on one edge and bake for an additional 10 minutes.
- Flip the biscotti to the other side and bake again for another 10 minutes.
- Cool completely.
