Cake Mix Biscotti

Try using a red velvet cake mix, and dip the bottom in melted white chocolate for a special Valentine's Day treat!


Cake Mix Biscotti
  • 1 cup - flour
  • 1/2 cup - butter melted
  • 1 tablespoon - vanilla extract
  • 3 large - eggs
  • 1 cup - mix-ins (if desired)
  • 1 - box cake mix

  1. Preheat oven to 375. Line baking sheet with silicone mat.
  2. In a bowl of a stand mixer combine the cake mix, flour, butter, eggs, and extract until combined – about 2 minutes.
  3. Add the mix-ins and mix for another minute.
  4. Divide the dough in half and form into 2 logs each about 12”x2”.
  5. Bake for 30 minutes. Let cool on pan for 15 minutes.
  6. Lower the oven temperature to 325.
  7. Using a serrated knife cut each log into ½ inch size slices. Arrange the slices on one edge and bake for an additional 10 minutes.
  8. Flip the biscotti to the other side and bake again for another 10 minutes.
  9. Cool completely.
