Spice Up Your Summer with This Fabulous Rhubarb Chili Recipe!

  • 1 pound ground beef
  • 1 pound ground pork (or 2 pounds ground beef or 2 pounds ground pork)
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 20 oz beef broth
  • 1/3 cup sweet corn
  • 1 TBS chili powder
  • 2 tsp cumin
  • 1 1/2 tbsps.
  • 1/4 tsp salt
  • 4 TBS diced green chilies
  • 2 cups chopped rhubarb
  • 2 cans (10 oz. size, each) of black beans, rinsed and drained
  • 1 cup diced red and orange sweet peppers
  • Salt and pepper to taste, for frying meat
  • 1 can of citrus beer
  • Grated cheese, for garnish (optional)



  1. In a large pan, over medium heat, cook the beef, pork, onion, and garlic until done, and drain.
  2. Add the broth, chili powder, cumin, salt, and beer, stir to combine, and bring the mixture to a boil.
  3. Reduce heat, and allow to simmer, uncovered, for about 30 minutes.
  4. Using a spoon, gently stir in the rhubarb and the beans, and return to a simmer, allowing the mixture to cook for about 15 minutes, or until the rhubarb is tender.
  5. Add some tortilla chips and serve.
