Spice Up Your Summer with This Fabulous Rhubarb Chili Recipe!

INGREDIENTS:
- 1 pound ground beef
- 1 pound ground pork (or 2 pounds ground beef or 2 pounds ground pork)
- 2 medium onions, chopped
- 2 garlic cloves, minced
- 20 oz beef broth
- 1/3 cup sweet corn
- 1 TBS chili powder
- 2 tsp cumin
- 1 1/2 tbsps.
- 1/4 tsp salt
- 4 TBS diced green chilies
- 2 cups chopped rhubarb
- 2 cans (10 oz. size, each) of black beans, rinsed and drained
- 1 cup diced red and orange sweet peppers
- Salt and pepper to taste, for frying meat
- 1 can of citrus beer
- Grated cheese, for garnish (optional)
DIRECTIONS:
- In a large pan, over medium heat, cook the beef, pork, onion, and garlic until done, and drain.
- Add the broth, chili powder, cumin, salt, and beer, stir to combine, and bring the mixture to a boil.
- Reduce heat, and allow to simmer, uncovered, for about 30 minutes.
- Using a spoon, gently stir in the rhubarb and the beans, and return to a simmer, allowing the mixture to cook for about 15 minutes, or until the rhubarb is tender.
- Add some tortilla chips and serve.
