INGREDIENTS:
Crust
- 1 C. flour
- 1/2 C. quick oats
- 1/2 C. brown sugar
- 1/2 C. butter
Filling
- 2 C. pumpkin puree
- 3/4 C. buttermilk
- 2 eggs
- 3/4 C. sugar
- Pinch of salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
Topping
- 1/2 C. brown sugar
- 2 T. butter
- 1/2 C. chopped nuts
DIRECTIONS:
- Preheat oven to 350°F.
- Combine crust ingredients in a mixing bowl and mix until crumbly.
- Press into a greased 9 x 13″ pan.
- Bake for 15 minutes and let cool.
- In a mixing bowl, combine filling ingredients and beat well.
- Pour over baked crust and bake for 20 minutes.
- Combine the next Topping ingredients and sprinkle over pumpkin bars and return to oven.
- Bake for 20 minutes or until set. Serve at room temperature.
