Pumpkin Pie Bars

INGREDIENTS:

Crust

  • 1 C. flour
  • 1/2 C. quick oats
  • 1/2 C. brown sugar
  • 1/2 C. butter

Filling

  • 2 C. pumpkin puree
  • 3/4 C. buttermilk
  • 2 eggs
  • 3/4 C. sugar
  • Pinch of salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves

Topping

  • 1/2 C. brown sugar
  • 2 T. butter
  • 1/2 C. chopped nuts

DIRECTIONS:

  • Preheat oven to 350°F.
  • Combine crust ingredients in a mixing bowl and mix until crumbly.
  • Press into a greased 9 x 13″ pan.
  • Bake for 15 minutes and let cool.
  • In a mixing bowl, combine filling ingredients and beat well.
  • Pour over baked crust and bake for 20 minutes.
  • Combine the next Topping ingredients and sprinkle over pumpkin bars and return to oven.
  • Bake for 20 minutes or until set. Serve at room temperature.
