Pickled Veggie Salad

Start your summer salad menu with this crunchy favorite!

INGREDIENTS:

  • 1 Head of shredded cabbage 4 small cucumbers
  • 2 green or red pepper 1 large red onion 1 bunch radish
  • 1/2 bunch celery
DRESSING
  • 1 Cup of oil
  • 1/2 cup warm water
  • 1 1/2 cup white vinegar
  • 10-12 Tablespoons sugar
  • 1Tablespoon salt
  • 1 Tablespoon garlic powder

DIRECTIONS:

  1. Slice all veggies and place in a large bowl.
  2. In a second bowl mix warm water, sugar, and salt, stirring until dissolved.
  3. Add the vinegar and oil and mix well.
  4. Pour mixture over vegetables and mix thoroughly, pack into jars tightly, and pour any leftover liquid equally into jars.
  5. Refrigerate until ready to eat. Will last several weeks in the refrigerator.
