Horseradish Meatloaf

 

Old-fashioned comfort food upgraded with a sharp, zippy twist and a sticky-sweet sauce you’ll want to drizzle on everything.

INGREDIENTS:

  • 2 lbs ground beef 20/80% fat
  • 1 cup crushed saltines
  • 1 large onion, chopped fine
  • 1⁄2 cup catsup
  • 1⁄4 cup milk
  • 2 large eggs, lightly beaten
  • 1½ tablespoon prepared horseradish
  • 1 teaspoon salt
  • 1⁄2 teaspoon pepper

For the Sauce:

  • 1⁄2 cup catsup
  • 4 tablespoons brown sugar
  • 1½ tablespoon prepared horseradish
  • 2 tablespoons brown mustard

     

    DIRECTIONS:

    1. Combine the meatloaf ingredients in a large bowl, mixing well.
    2. Form mixture into a loaf, and place in a 9x5x3 inch loaf pan.
    3. Combine sauce ingredients in a small bowl, stirring well.
    4. Spoon half the sauce mixture over the top of the meatloaf.
    5. Bake uncovered, at 375° for 45-50 minutes.
    6. Spoon the remaining sauce mix over the meatloaf, and bake for an additional 10 minutes.
    7. Make sure internal temperature is above 165°.
    8. Remove to a serving platter.
