Honey Glazed Sweet Potatoes

Sweet potatoes are oven-roasted with honey, brown sugar, butter, and whisky for a rich, caramelized side dish with warm, comforting flavor.

Ingredients

  •  unsalted butter
  •  ¼ cup honey (wildflower orange blossom or clover)
  •  2 tbsp Cody Road Honey Whisky
  •  2 tbsp dark brown sugar (packed)
  •  3 lbs sweet potatoes (yams peeled and cut into 1 inch chunks) 3/4 tsp kosher salt
  •  ¼ tsp black pepper (freshly ground)
  •  ¾ tsp kosher salt

Directions 

  1. Preheat oven to 350. Butter 2-quart casserole dish.
  2. In small saucepan over moderately high heat, combine butter, honey, Cody Road Honey Whisky, and sugar.
  3. Bring to simmer, whisking until butter and sugar are melted, then reduce heat to moderately low and simmer, uncovered, 10 minutes.
  4. In large bowl, toss potatoes with butter mixture, salt, and pepper.
  5. Transfer to prepared dish and bake, tossing occasionally, until tender and glazed, about 45 minutes. Serve warm.
