Greek Chickpea and Couscous Grain Bowl

Where healthy and tasty meet together for a perfect side dish.

  • 1 1?2 cups cooked couscous
  • 1 can chickpeas, rinsed and drained
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, chopped
  • 2 cups sliced mini sweet peppers
  • 1?2 cup crumbled feta cheese
  • 3 tbsp. olive oil
  • 3 tbsp. red wine vinegar
  • 1?2 tsp. salt + more to taste
  • 1?2 tsp. freshly ground black pepper + more to taste
  • 1?2 tsp. garlic powder
  • 2 tsp. dried oregano
  1. In a large bowl, place couscous, chickpeas, tomatoes, cucumber, and peppers.
  2. In a small bowl whisk together olive oil, red wine vinegar, salt, pepper, garlic powder, and oregano.
  3. Pour the dressing over the couscous mixture and mix to combine.
  4. Top with crumbled feta and mix to combine.
