INGREDIENTS:
- 1 tsp sesame oil
- 2 tsp butter
- 1 Minced shallot
- ⅓ cup Green onions sliced on the bias
- ⅓ cup Celery sliced on the bias
- 1 tsp Minced fresh ginger
- 1 cup River Rose Gin
- ¼ cup Fresh lemon juice
- 2 tsp Minced fresh cilantro [substitute parsley if you prefer]
- 4 Boneless skinless chicken breasts
DIRECTIONS:
1. Sauté the onions, celery, shallot in the butter and sesame oil until
softened
2. Add the chicken breasts and brown slightly
3. Mix the gin, lemon juice and ginger and pour over the chicken
4. Add the cilantro just before serving
