Gazpacho

 

Warm Up Your Fall with a Cozy Twist on Classic Gazpacho!

INGREDIENTS:

  • 3 tablespoons apple cider vinegar
  • 1 to 2 teaspoons honey, if tomatoes aren’t very sweet, optional
  • Sea salt and freshly ground black pepper, to taste
  • Garnish ingredients:
  • 1 medium tomato or 12 cherry tomatoes, chopped
  • 1 cucumber, chopped
  • 1 red or green pepper, chopped
  • 2 scallions, chopped

 

DIRECTIONS:

  1. Working in batches in the container of a food processor or blender, combine the tomatoes, garlic, bread cubes, basil, onion, pepper, cucumber, oil, vinegar, and honey if using, and salt and pepper to taste.
  2. Blend until almost smooth. The soup will be chunky. Taste for seasoning and add more oil and vinegar if too thick. Season to taste with more salt, pepper and honey.
  3. Cover and refrigerate for at least 2 hours. Serve cold topped with any or all of the garnishes.
