French Onion Soup Rice Casserole

A savory blend of caramelized onions, rice, and melted cheese, creating a delightful twist on classic French onion soup!

INGREDIENTS:

  • 1 cup long-grain white rice
  • 2 tablespoons unsalted butter
  • 4 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste 
  • 1 cup shredded Gruyère cheese
  • Fresh thyme for garnish

 

DIRECTIONS:

  1. Cook the rice according to package instructions. Set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the thinly sliced onions and garlic, stirring occasionally until they become soft and golden brown.
  4. Sprinkle sugar over the caramelizing onions to enhance sweetness.
  5. Pour in the dry white wine to deglaze the pan, scraping up any brown bits from the bottom.
  6. Add beef broth, Worcestershire sauce, salt, and black pepper.
  7. Simmer for 15-20 minutes to allow the flavors to meld.
  8. Preheat the broiler.
  9. Mix the cooked rice into the onion soup mixture.
  10. Transfer the mixture to an oven-safe dish and sprinkle shredded Gruyère cheese over the top.
  11. Place the dish under the broiler until the cheese is bubbly and golden brown.
  12. Garnish with fresh thyme before serving.
