Cream Wafer Cookies

Delicate, sugar-dusted cream wafer cookies sandwiched with sweet vanilla butter icing—perfect for any special occasion.

INGREDIENTS

For Cookies:

  • 1 cup Butter Soft
  • 1/3 cup Heavy Cream
  • 2 cups All-Purpose Flour
  • 1.4 cup Granulated Sugar

For Butter Icing

  • 1/4 cup Butter Soft
  • 3/4 cup Powdered Sugar
  • 1 tsp Pure Vanilla Extract
  • Food Coloring

DIRECTIONS

For Cookies:

  1. Mix thoroughly 1 cup soft butter, 1/3 cup heavy cream, and 2 cups flour.
  2. Chill dough in plastic wrap for 1 hour.
  3. After dough has been chilled, roll out to 1/8 inch thick and cut into 1/2" rounds.
  4. Place each round on plate with granulated sugar to coat both sides of dough.
  5. Put on ungreased cookie sheet and prick with a fork four times.
  6. Preheat oven to 375°F (190°C).
  7. Bake for 7 to 9 minutes, or until the cookies are set but not browned. Let cool completely on a wire rack.

For Butter Icing:

  1. Let the butter sit at room temperature until soft but not melted. In a mixing bowl, beat the butter until smooth and fluffy. Gradually add the powdered sugar, mixing well until the icing is light and creamy. Add the vanilla extract and mix until fully blended. If desired, add food coloring a drop at a time, mixing until the color is evenly distributed.
  2. Use the icing to sandwich two cooled cream wafer cookies together. Press gently so the filling spreads to the edges. Let the assembled cookies rest to allow the icing to set slightly before serving.
