Cabbage & Apples With Sausage

INGREDIENTS:

  • 1 slice bacon, diced

  • 1 tablespoon salted butter

  • 1 medium apple, coarsely chopped (Honeycrisp works great)

  • 1 smoked sausage link, sliced into bite-size pieces

  • 1 small onion, coarsely chopped

  • ½ head green cabbage, sliced and chopped (about 3–4 cups)

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon sugar

  • ÂĽ teaspoon kosher salt, plus more to taste

  • Ground black pepper, to taste


DIRECTIONS:

  1. Cook the bacon:
    In a large skillet over medium-high heat, cook the bacon until crisp, about 6–8 minutes.
    Remove with a slotted spoon and set aside, leaving about 1 tablespoon of drippings in the pan.

  2. Sauté the vegetables:
    Add the butter to the skillet with the drippings. Once melted, stir in the apple, onion, and cabbage.
    Cook, stirring often, until the vegetables begin to soften — about 5 minutes.

  3. Add sausage and bacon:
    Return the sliced sausage and bacon to the pan.

  4. Season and simmer:
    Stir in the vinegar, sugar, salt, pepper, and nutmeg. Continue cooking until the cabbage is tender — about 7–10 more minutes.

  5. Taste and serve:
    Adjust the seasoning with extra salt and pepper if needed.
    Serve warm.
