Bishop’s Bread

Our old-fashioned recipe makes a simple and festive quick bread. Add in cherries, walnuts, chocolate, currants, or whatever else you fancy!

INGREDIENTS:
  • 2 ½ c. flour
  • ½ t. salt
  • 1 ¼ c. packed brown sugar
  • 1 t. cinnamon
  • ½ c. butter
  • 1 t. baking powder; ½ t. baking soda
  • 1 egg
  • ¾ c. buttermilk or sour milk (milk + ½ t. vinegar; I use apple cider vinegar)
DIRECTIONS:
  1. Preheat to 375°.
  2. Combine the flour, salt, sugar, and cinnamon.
  3. Cut in butter until the mixture is a consistent texture. Reserve ¾ c. for topping.
  4. Add baking powder and soda.
  5. Beat in egg and buttermilk.
  6. Turn into two greased 8-inch square pans.
  7. Sprinkle with reserved 3/4 cup topping.
  8. Bake at 375° for 25 minutes.
  9. Serve warm with butter.
